If you love a good curry but want something lighter, fresher and packed with vegetables, this Cauliflower Rice Curry is a fantastic option. Instead of traditional rice, we use freshly grated cauliflower to create a nutritious vegetable-based alternative, combined with plenty of garlic, onion, capsicum, celery and warming spices.
With turmeric, cayenne, garam masala, lime and a touch of soy sauce, this curry has plenty of flavour while keeping the ingredients simple and whole-food based.
Ingredients:
1 large cauliflower
2 large onions
12 large cloves of garlic
4 red capsicums
1 green capsicum
5 large stalks of celery
2 teaspoons turmeric powder
1 teaspoon cayenne pepper
4 teaspoons garam masala powder
2 tablespoons soy sauce
2 dessert spoons cider vinegar
Juice of 1 lime
Coconut oil for cooking
Olive oil
Homemade aioli or yoghurt for dressing
Method
Remove the core from the cauliflower and chop it into large florets. Peel the garlic and onions and chop the capsicum into wedges.
Run the cauliflower through a coarse grater to create the cauliflower rice. Finely chop the garlic and onions, chop the celery into medium-sized pieces and cut the capsicum into chunks.
Juice the lime and set aside.
Heat 3–4 tablespoons of coconut oil in a wok until it is very hot. Add the garlic, onion, turmeric, cayenne pepper and soy sauce. Cover and sauté for around 5 minutes until the onion and garlic begin to caramelise.
Add the capsicum and celery along with the lime juice and cider vinegar. Stir well and cook for another 5–10 minutes until the vegetables are semi-soft.
Finally, add the cauliflower rice. Drizzle with olive oil and sprinkle over the garam masala. Stir gently and cook over high heat until the cauliflower is semi-soft and slightly charred in places.
Serve with homemade aioli or a swirl of plain yoghurt.
This recipe makes approximately 4 servings and is a fantastic way to enjoy a hearty, satisfying curry while getting a huge variety of fresh vegetables into your diet.
It’s particularly suited to your detox and weight-management programmes, but it’s also simply a delicious way to enjoy cauliflower in a completely different form.
