Here’s another quick, nutritious and satisfying vegetable meal that works beautifully during a detox or weight-management programme.

This stir-fry combines roasted purple kumara with Brussels sprouts, broccoli, capsicum, garlic and onion, then finishes it with fresh avocado and homemade aioli. The turmeric, cayenne pepper, soy sauce and fresh lime give it plenty of flavour without needing complicated ingredients.

Ingredients

  • 6 cloves garlic
  • 1 onion
  • 1 avocado
  • 10 Brussels sprouts
  • 1 small head of broccoli
  • 1 capsicum
  • 1 large or 2 medium purple kumara
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper
  • 1 tablespoon soy sauce
  • Juice of 1 lime
  • Butter for sautéing
  • Homemade aioli

 

Method

Dice the garlic and onion. Cut the Brussels sprouts in half and chop the kumara, broccoli and capsicum into bite-sized pieces.

Start by roasting the kumara for approximately 45 minutes, or until soft.

While the kumara is cooking, sauté the Brussels sprouts in butter. Then stir-fry the garlic and onion with the turmeric and cayenne pepper. Add the soy sauce and fresh lime juice and continue cooking until the vegetables are tender but still have some crunch.

Once everything is cooked, combine the roasted kumara with the stir-fried vegetables and finish with diced fresh avocado and a generous drizzle of homemade aioli.
