Zucchini and Broccoli Red Curry In A Bowl

A simple but delicious meal that can be knocked up in under 20 minutes.

It has the satisfying crunch of broccoli, the soft sweet potato comfort finished off with the warm red curry.

SERVES 2

Ingredients:

  • 1 x Large Kumara (sweet potato)
  • 1 x Zucchini
  • Small head of broccoli
  • 1 x Onion
  • 6 x cloves of Garlic
  • 400g can of tomatoes
  • 100g Tomato paste
  • Mixed herbs
  • Paprika
  • 1 Tbsp Curry Paste (I use Thai red curry or Indian Kashmiri paste)

Method:

Finely chop the onion, garlic and put them aside.

Chop the sweet potato into wedges and roast in a pan in olive oil or coconut oil, until half cooked (still a little firm). In the last 3-5 minutes of cooking the sweet potato stir in the chopped broccoli and zucchini, onions, and garlic. Then pour in the can of tomatoes, tomato paste, mixed herbs. paprika and curry paste. Simmer for 2-3 minutes until heated through. Serve with a little cilantro.
