Quick Detox Stir Fry Vegetables

Quick Stir-Fry

Sometimes you don’t need a complicated recipe to make a great healthy meal. This quick vegetable stir-fry takes just a few minutes to prepare and is packed with fresh vegetables, garlic and warming spices. It’s a fantastic simple meal for two people and is suitable for all of our Ultimate Herbal Detox and SLIM programs. Ingredients 1 x 2-inch wedge of cabbage 1 broccoli 6 cloves garlic 1 onion 1 capsicum 1 teaspoon turmeric 1 teaspoon chilli flakes 2 tablespoons Worcestershire sauce or soy sauce Method Simply chop all the vegetables into bite-sized pieces. Start by adding the garlic, onion and capsicum to a hot frying pan or wok. Add the turmeric and chilli flakes and sauté until the onion and capsicum begin to soften. Add the cabbage and broccoli along with the Worcestershire sauce or soy sauce, and stir-fry for approximately 5 minutes. The trick is not to overcook the vegetables. You want them softened slightly while still retaining some of their crunch, colour and freshness. Serve with homemade aioli, hummus or guacamole for a delicious and satisfying meal. Quick, nutritious, full of flavour and incredibly easy to prepare—this is exactly the sort of simple whole-food meal that makes healthy eating during a detox much easier. This Multipurpose Coleslaw Is A Healthy Detox Meal for Gut Health Looking for a simple, fresh and versatile meal during your detox programme? Remove the thyme leaves from their stems and finely chop the rosemary. Slice the leeks into chunky pieces and set them aside separately, as they will be fried just before serving. Step 2 – Build the flavour base Heat the butter and coconut oil in a large saucepan over medium heat. Add the onions, garlic, cayenne pepper, chilli flakes and Worcestershire sauce. Cook gently for around 10 minutes, stirring regularly until the onions become golden brown and begin sticking slightly to the bottom of the pan. This caramelisation develops the rich, savoury flavour that makes homemade soups so satisfying. Step 3 – Cook the mushrooms Add the chopped mushrooms together with the thyme and rosemary. Stir thoroughly until every piece of mushroom is coated in the onion mixture. Continue cooking for several minutes until the mushrooms soften and release their natural moisture. Unlike many commercial recipes, no stock cubes are needed. The vegetables themselves create an intensely rich broth full of natural flavour. Step 4 – Add the coconut Pour in the coconut cream and coconut milk. Stir until smooth. If needed, add a small amount of water to achieve your preferred consistency. Squeeze in the lime juice and season with sea salt and black pepper. Reduce to a gentle simmer for 20–30 minutes. Slow cooking allows the mushrooms, herbs and spices to blend into a wonderfully balanced soup. Step 5 – Blend Using a stick blender, partially puree the soup. Leave some mushroom pieces intact to provide texture while creating a thick, creamy consistency. Step 6 – Prepare the crispy leeks Heat a frying pan with olive oil and a small knob of butter. Cook the leek chunks until golden brown and crisp around the edges. These become the perfect garnish, adding sweetness and texture. Step 7 – Serve Ladle the soup into bowls. Greek Black Rice Stuffed Capsicum

A stunning combination of flavours using cilantro, capers, green olives, and pistachio nuts along with black rice to stuff these capsicums. They’re a meal in themselves but would be perfect alongside some white fish or chicken breast. Preparation time 30 minutes Serves 4 https://youtu.be/b8kPkcULCIs Ingredients: 1 cup black rice or wild rice mix 2 cups water 4-5 x large capsicum 1 x tablespoon olive or coconut oil  5 x spring onions, sliced 1 x red onion, finely diced 4 x garlic cloves, diced Half cup raw pistachio nuts ¼ cup raw sunflower seeds Half cup of green olives, sliced Large handful fresh cilantro (finely chopped) 3 tablespoons balsamic vinegar 3 tablespoons nutritional yeast flake Ingredients for caper and parsley yogurt: 2/3 packed cup cilantro 1 cup coconut yogurt 1 tablespoon capers 1 x squeezed lemon juice 1 teaspoon apple cider vinegar 1 garlic clove, diced ¼ teaspoon sea salt Cooking Method: For the caper and parsley yoghurt, place all the ingredients in a blender and blend for 20 to 30 seconds, until smooth. Transfer to a small jug and place in the fridge for 30 minutes to set. Pre heat the oven to 180 degrees fan bake. Find a larg baking tray or roasting dish. Place the rice and water in a saucepan, cover and bring to the boil. Once boiling, reduce the heat to low and simmer for about 5 minutes. Then allow to sit until the water has been absorbed and the rice is soft. Place the capsicums on the prepared baking tray and bake for 15 to 20 minutes, until soft and juicy. Meanwhile, heat the oil in a small frying pan over a medium-high heat. Add the spring onion, red onion, and garlic and cook, stirring frequently, for 5 to 7 minutes, until soft and fragrant. Add the pistachios and seeds and cook, stirring occasionally, for another 3 minutes. Remove and transfer to a large bowl. Add the rice, olives, parsley, balsamic vinegar, and nutritional yeast, and mix to combine all the ingredients. Remove the capsicums from the oven and divide the filling evenly among the capsicum halves. To serve, top with a dollop of caper and parsley yoghurt and serve with a side white fish, chicken breast or mushrooms.

Italian Lentil Bolognaise with Zucchini Noodles

Truly incredible how this dish tastes as good if not better than traditional spaghetti Bolognese with minced beef and pasta noodles, but this one is completely vegetarian and has almost zero calories in comparison. This dish can be a revelation! Preparation time 45 minutes Serves 4-6 Ingredients for lentil bolognaise 1 tablespoon olive, avocado or coconut oil optional 1 large brown onion, diced 4 cloves garlic, diced 2 large carrots, peeled and grated 2 cups button mushrooms, sliced 2 cans brown lentils, drained and rinsed or 3 cups cooked lentils 2 cups tomato passata 1 cup coconut milk from a can 2 tablespoons tamari (or coconut aminos) 1 tablespoon balsamic vinegar 1 ½ teaspoons ground cumin 1 tablespoon dried oregano 2/3 cup whole black olives 2 teaspoons honey 1 teaspoon chilli flakes Half cup fresh dill 4 large zucchini, trimmed To serve coconut yogurt and fresh dill optional Method for the Bolognaise: If needed, precook lentils and drain. Spiralize the zucchini, dice onions, and garlic, slice mushrooms, shred carrots, and also place side. Heat the oil in a large frying pan over medium-high heat. Add the onion and garlic and cook for 5 to 7 minutes, stirring frequently until soft and fragrant. Add carrots and mushrooms and cook for additional 3 minutes. Add lentils, passata, coconut milk, tamari, balsamic vinegar, cumin, oregano, olives, honey and cayenne pepper. Reduce the heat to low and simmer for eight to 10 minutes, stirring occasionally, until fragrant. Quickly saute the zucchini noodles with a little butter just to warm them up. Mix the fresh dill in just before serving Serve the boloneaise on a bed of zucchini noodles, with a dollop of yoghurt. Add more fresh dill if desired.

Quinoa, Kumara and Eggs

Quinoa often pronounced wrongly (sounds like keen-waa) is a superfood known to be high in protein and is fantastic for vegans and vegetarians.  Today we’re going to combine it with some sweet potato and a simple dressing. You could have a poached egg on the side if you want to add further protein.  Enjoy! Preparation time 25 minutes Serves 4 https://youtu.be/b9QgVhWWFz4 Ingredients: 1 heaped cup (about 200g) Quinoa 4 tablespoons coconut oil 4 small or 2 large Kumara, peeled and cubed 2 handfuls of baby spinach For the dressing: 3 tablespoons olive oil 3 tablespoons cider vinegar  2 teaspoons honey 1 heaped teaspoon Cajun spice Salt Method: Cook the quinoa by using twice as much water as quinoa, then cook until the quinoa has absorbed all the water.  Drain, rinse, and set aside. Heat some coconut oil in a pan and gently cook the Kumara cubes, turning from time to time, for 10-15 minutes or until tender. Put the dressing together with the oil, vinegar, and honey and season to taste. Combine the salad ingredients, toss with the dressing, and serve, or combine Kumara and Quinoa with dressing and lay on a bed of spinach.  Add a couple of poached eggs if you desire.
