During your Herbal Detox or Herbal slimming program processed foods are to be avoided. This can leave you feeling a little deprived, especially if you like big carbs. Because you might still feel like some comfort food my Roast Vegetable Salad is extremely filling, full of life and as guilt-free, as can be. SERVES 4-6 Ingredients: 2 x Large Kumura 3 x Large Parsnips 3 x Large Carrots 2 x Large Capsicum 6 x Large Button Mushrooms 1 x Red Onion 4 x Tomatoes 12 cloves of Garlic (optional) A handful of Pea Shoots (or you can add celery or cucumber) Dress with Balsamic Vinegar or Sweet Chili Sauce Method: Peel Kumura, carrots and Parsnip. Cut into large wedges. Place with Coconut Oil into a roasting dish and place in the oven when hot. Roast for about 25 minutes, then stir. After another 20 minutes add wedges of Red Onion and chopped mushrooms. You can also add in some whole garlic cloves if you like garlic. Continue roasting until soft and golden, remove and allow to partially cool. Serve with a side salad of pea shoots, Celery or cucumber, wedges of Tomato. You could also add some Avocado when they are in season. Drizzle with Balsamic Vinegar and Sweet Chili Sauce, or try our Spicy Salad Dressing or our Homemade Aioli. Zucchini Savories
The ultra-versatile Zucchini strikes again with this party dish. Ideal for during your Ultimate Herbal SLIM or Ultimate Herbal BodiTune program. This dish is tasty and simple can easily be doubled to serve up to 12 people. Ingredients: 3 x Medium sized Zucchini 1 x white Onion 10 x cloves of Garlic 1 x Capsicum 10 x Free-range Eggs 2 Tsp Mixed Herbs 2 Tsp Paprika 2 Tsp Cajun spice or Cayenne  Method: Butter the muffin tray. Thinly slice the Zucchini and line the tray with the slices. Finely chop Onion, Garlic, Capsicum and add to a bowl. Add the eggs and herbs and whisk until smooth. Fill the Zucchini cases and place them in the oven at 200 C for 45 minutes. Enjoy with Avocado, Tomato, and/or any salad. Spicy Salad Dressing Vinaigrette
Here is a great dressing for all of those salads you will be doing during your Ultimate Herbal Detox and slimming programs. It’s sugar-free, has good fats, and is nice and spicy so it helps to get the digestive process humming. Ingredients 150ml Plain Yoghurt 75ml Cold-pressed olive oil 30ml Apple cider Vinegar 2-3 Tsp Hot English mustard 1 Tsp Paprika (or cayenne pepper if you’re keen) Method Add all ingredients into a small jug and whisk until smooth. Mediterranean Summer Salad
This Mediterranean Salad is refreshing and full of great clean foods. Mix it up with your choice of greens! Iceberg Lettuce, Baby Spinach or Mescaline Greens, they all work! It is great for lunch or dinner. Serves 2 people Ingredients: Either Iceberg Lettuce, Baby Spinach or Mescaline Greens (or a mix of all 3) 1 x Chopped Avocado 4 x Sliced Radishes Half a sliced Cucumber 2 x sliced Tomato Quarter of a red onion A dozen Sun-dried Tomatoes A dozen Olives A little Pesto Dressing: Equal parts (about 100ml) of Olive oil, Plain yogurt, Apple cider vinegar. Add a dessert spoon hot English mustard (or mustard powder) and 1 tsp paprika. Method: Place the greens in the bowl then cut everything else and throw it in! Toss with the dressing. Enjoy! Carrot, Ginger & Turmeric Smoothie
A classic detox drink contains carrot, ginger, and lemon. This is a simple uncomplicated, healthy twist on a smoothie and includes turmeric the super antioxidant. Ingredients: Small bulb of Ginger root 1 dessertspoon Turmeric 1 small Lemon with the skin on 2 small Carrot (or one large) 8 cubes of Ice Honey or Stevia to sweeten 1 cup Orange juice Method: Chop all ingredients and add to the blender. Thai Green Fish & Coconut Curry
Although I recommend a mostly plant-based diet, I still feel the need for a little animal protein from time to time. My favourite source is fresh fish. This is a lightly tangy and delicious meal with a Thai curry flavor. It will have you going back for seconds! You can leave out the fish if you’re on a 14-day Herbal DETOX program and it will still taste great! Serves 4 people Ingredients: 6-8 cloves Garlic 1 x Large Onion 2 x Large Carrot 2 x Red Capsicum (Bell Pepper) 10-12 x Button Mushrooms 1 x Large head of Broccoli 100ml Authentic Thai Green curry paste 800ml Thick Coconut cream 500gm of Trevally, Lemon Fish (or other firm-fleshed fish) 1 Tsp each Cayenne Pepper and Turmeric Juice of 2 Limes Bunch of Corriander Method: Preparation Finely chop garlic, slice capsicum, wedge onion, and set aside in a bowl. Cut carrot into small 1/8 inch slices, and broccoli into small bite-size florets Chop mushrooms into quarters and set them aside Dice fish into 1-inch cubes and place in the fridge Cooking Set oven to 125 C Heat enough coconut oil in a wok to just cover half the fish cubes. Fry fish on medium heat for about 2-3 minutes until cooked. Do half at a time and set aside in warmer Rinse wok and add fresh oil. Stir fry garlic, onions for 2-3 minutes adding spices, then add carrot, broccoli, and 1/2 cup of water. Brett’s Brain Bliss Balls
One thing that is affected by detoxing is your brain. Our brains get hooked on stimulants like sugar, caffeine, alcohol, nicotine, prescription drugs and other chemical additives used in foods and drinks. Not to mention the snack habits that can be hard to break during the detox or slimming program. This recipe provides a treat or snack during your Herbal BodiTune 30 day detox or Herbal Slim program. It’s sugar-free and high in nutrition, good fats, protein, and antioxidants. Blueberries, cacao, and walnuts all have specific nutritional benefits for the brain. See below. Ingredients: 12 Dates 1 cup of walnuts 1/2 cup shredded coconut 1/3 cup coconut oil 1/3 cup raw cacao powder 2 Tablespoons of blueberries 1 Tablespoon of chia seeds 1 Tsp vanilla essence Method: Soak the dates in water for 1 hour until soft. Soak the Chia seeds in just enough water to cover them, so they thicken into a semi-solid jelly. Place the walnuts in the blender and process until a fine meal. Add everything else and process until a little pasty. Place mixture into a bowl and spoon out onto some coconut to roll into balls. Place into the fridge and allow to solidify for 1 hour before eating. Lime, Coconut & Avocado whip
Chia seeds and avocado make up this filling and delicious dessert. Pop a fresh strawberry on top to make it a celebration! Great for during your detox or slimming program and it only takes a few minutes. Serves 3 people Ingredients: 1 large avocado 1 Lime 1 Dessertspoon of Chia Seeds 1 can of coconut cream or 500ml of Coconut Yogurt 1 tsp of stevia or 3 stevia tablets 1 Dessertspoon of honey 12 cubes of ice Method: Soak Chia Seeds in 100ml of water for 20 minutes or until thick. Add all ingredients to a high-speed blender and whip until smooth and thick. Serve with a sprig of spearmint or chopped mint leaves. Or grate a bit of dark organic cacao onto the top!) Chocolate Pineapple Yogurt
Try my latest favorite dessert – Chocolate Pineapple Yogurt! We ate it quite a lot during our last Ultimate Herbal DETOX. It’s so fast and easy you won’t believe it. It takes about 5 minutes maximum! Ingredients: (per serving) 2 cups of plain unsweetened yogurt 2 tsp of Raw Cacao powder 1 inch thick ring of pineapple 1 tsp Cinnamon Small handful of raisins 1 tsp of stevia powder Method: Put the yogurt into your dessert bowl and add the Cacao powder and crushed stevia powder (or drops). Stir with a whisk until smooth. Cut the pineapple into small bite size wedges and drop onto the yogurt. Sprinkle with Raisins and dust with the cinnamon. I like about 6 dates with mine. Thai Vegetable Green Curry
This is one of my absolute favorites. It’s easy to eat too much of it but it’s guilt-free so very enjoyable. It’s not a genuine Thai recipe but my own take on a classic green curry. Try this during your Herbal DETOX or Herbal SLIM program. Serves 4 people Ingredients: 1 x Capsicum 12 cloves of garlic 2 x Tomato 1 x large sweet potato (or pumpkin) 1 x large parsnip 1 x large onion 2 x Carrot 250 gm field mushrooms 1/2 cauliflower 1 x Can of Coconut milk 1Tsp turmeric 100gm Authentic Thai Green Curry paste A thumbnail size of Ginger finely chopped Method: You will need to peel and boil sweet potato and parsnip earlier and allow to sit, air and cool. They can then be cubed and will hold together nicely. Slice all other ingredients and place into bowls as pictured. Capsicum with tomato, garlic with onions etc. Heat oil in a wok and stir-fry mushrooms for 3-4 minutes until sealed then remove and put aside. Add more oil and heat again, add garlic, onions, carrots and cauliflower and 1tsp Turmeric. Stir fry until coated with turmeric. Then add 100ml of water and cover with lid. Steam for 2-3 minutes until a little soft. Throw in ginger, green curry paste, coconut milk, sweet potato and parsnip and gently combine. Allow to come to a simmer for 2-3 minutes then gently add mushrooms, capsicum, and tomatoes. Allow to heat through for another 5 minutes on low heat. You are now ready to serve.
