Mediterranean Salad

This Mediterranean Salad is refreshing and full of great clean foods.

Mix it up with your choice of greens! Iceberg Lettuce, Baby Spinach or Mescaline Greens, they all work!

It is great for lunch or dinner.

Serves 2 people

 

Ingredients:

Either Iceberg Lettuce, Baby Spinach or Mescaline Greens (or a mix of all 3)

  • 1 x Chopped Avocado
  • 4 x Sliced Radishes
  • Half a sliced Cucumber
  • 2 x sliced Tomato
  • Quarter of a red onion
  • A dozen Sun-dried Tomatoes
  • A dozen Olives
  • A little Pesto

 

Dressing:

Equal parts (about 100ml) of Olive oil, Plain yogurt, Apple cider vinegar. Add a dessert spoon hot English mustard (or mustard powder) and 1 tsp paprika.

Method:
Place the greens in the bowl then cut everything else and throw it in! Toss with the dressing. Enjoy!
