Beetroot, Celery & Chive Salad

How simple can a great salad be? Serves 2 people Ingredients: 2-3 whole beetroot ​½ a head of celery a handful of fresh chives Method: Peel and steam beetroot until a little soft but still firm. Allow to cool, then chop into bite-sized wedges. Chop celery into small pieces and stir into beetroot along with finely chopped chives. Dress with fresh lemon juice or red vinaigrette. Did you know? Beetroot – A little red beauty! Kale & Lime Smoothie

Coconut, Apple & Date Whip

Ingredients: (per serving) 1 x large apple 6 x dates 2 x dstspn soaked shredded coconut 1 cup of unsweetened yogurt Cinnamon sprinkle  ​ Method: Soak coconut in just enough water to cover it for 20 minutes. Chop apple into quarters. Add to blender along with dates, coconut and ½ cup of water. Blend using the pulse function until apple is just minced and you get a nice thick lumpy paste. Thai Carrot Salad

Thai Spicy Carrot & Apple Salad

A little hot number – and such a simple recipe. I often end up with a few too many carrots and apples in the fridge and this is a great way to use them up, not to mention it’s super healthy. With just the right amount of fresh chili, this is guaranteed to get your taste buds going. If you’re not against eating a little fish, you can include the traditional Thai fish sauce and it tastes amazing. That’s OK on your detox too. Serves 2 people Ingredients: 6 x cloves of garlic 2 tbs chili flakes 1 tbs honey 2 tbs olive oil 1 tbs lime juice 4 x large carrots 1 x crisp red apple ½ cup of raisins ¼ cup chopped cilantro leaves Fish Sauce (optional) Method:Shred the carrots, dice the apple and mix together in a bowl with the raisins, finely chopped garlic, cilantro and chilli flakes. Blend olive oil, honey, fish sauce and lime juice in a separate bowl until smooth and then pour over salad. Mung Bean Coleslaw

Cabbage Health Benefits A delightful dinner or lunch option. Serves 4 people Ingredients: A handful of mung bean sprouts ¼ cabbage 1 x large carrot 1 x tomato 1 x red onion A handful of baby spinach Fresh parsley Lemon juice Olive oil White Wine Vinegar Pickled Cucumbers and olives as an extra if you like   Method:Slice the cabbage into chunky bits and throw in the salad bowl. Shred the carrot and slice the red onion then throw them in too. Toss in the mung bean sprouts and spinach. Dice up the parsley and throw it into the mix. Toss the coleslaw in the bowel. Rocket is such an amazing herb I grew this Rocket in my herb garden and I can’t believe how much rocket I have to eat within the first month. Not only is it delicious but super healthy. Kumara Salad

Kumara, Capsicum Leafy Salad

This recipe makes an ideal lunch or dinner during your one or two-month Detox or Slim program. (Without the Feta it is suitable for 7 to 14-day DETOX program) This is very quickly prepared, using cubes of kumara or sweet potato leftover from a previous night’s meal. Serves 2 people Ingredients: 1 x Cooked sweet potato (Kumara), chopped into mouth-size pieces A Handful of Mesculin salad 1 x chopped red capsicum 50g of diced Feta cheese Method:Blend all together. The Kumara and feta give substance to an otherwise light and leafy salad. Cottage cheese or ricotta may be substituted for feta. Aioli Dressing:Peel and crush 3-6 cloves of garlic. Whisk together with 1/2 cup of yogurt, 1/4 cup extra virgin olive oil, Juice of 1/2 lime (or lemon), 1 tbsp of apple cider vinegar. Sweeten with 2tsp liquid honey or 2 x crushed stevia tablets. Ingredients: (per serving) 1 large knob of butter 3 Organic Free-range Eggs Tomato, Basil, and Parsley Method: Heat the pan first then throw in the butter and break eggs quickly before the butter has completely melted. Whisk the eggs continuously with a fork, attempting to eliminate the appearance of any white. Turn the pan off as soon as the egg begins to stiffen, allowing the egg to finish cooking from the latent heat of the pan. The extra amount of butter makes the egg bright yellow and extra rich. Sweet and Sour Chinese Salad

Sweet & Sour Chinese Style

This is a nice variation on Chinese sweet and sour. You can use these ingredients or try other vegetables of your choice. If you’re doing the one or two-month Herbal DETOX program then you could include some cubed fish, and if you’re doing the Herbal SLIM program then you could even try cubed chicken. Just quickly stir-fry the meat first, place aside and add back in just before serving. Serves 4 people Ingredients: Vegetables: 1 x large onion 6 x cloves of garlic 2 x carrots 2 x capsicums 1 x small head of broccoli 6 x flat mushrooms 1 x handful of spinach greens (or green runner beans) 1 x ring of pineapple chopped into pieces Sauce: 1⁄2 cup tomato paste 2 tbsp fresh ginger 1 small lemon 1 tsp paprika 1 tsp turmeric 2 dstp honey 1 tsp cayenne 1 dstp soy sauce Method: First of all mix the sauce, by melting the honey in hot water. Place dry ingredients in a bowl and mix, while adding soy sauce, lemon juice, and melted honey. Combine with tomato paste and fresh ginger. Then chop all vegetables into bite-size pieces as you desire. Slice and stir fry the mushrooms first and place to one side. Sauté in olive oil the onions, garlic for 2 minutes, then add the carrots, broccoli until half cooked and still crunchy. Add the spinach greens, mushrooms, pineapple and sauce and allow to come to a gentle simmer to 2 minutes.
