Serves 4 people
- 6 x Cloves Garlic
- 1 x White Onion
- 16 Button Mushrooms
- 1 x Pulled Roast Chicken
- 1 cup of Dahl (red or yellow)
- 2 cobs or 2 cans of Corn Kernals
- 500ml Fresh Cream
- 50gm Butter
- 4 Tbsp Olive oil
- 4 tsp Mixed Herbs
- 4 tsp Turmeric
- 2 tsp Paprika
- 1/2 tsp Allspice
Serves 4 or in my case serves 2 for 2 nights!
Boil 1 part Dahl in 2 parts water slowly and allow to rest. Once cooled blend dahl until smooth adding the turmeric, allspice and paprika.
Melt butter and oil in large saucepan then add diced garlic onions, mushrooms and mixed herbs, simmer for 5 minutes. Add chicken, 2 cups of water and allow to simmer. Add corn kernels, cream and dahl then stir until hot. Add extra water if you want a thinner soup. Heat until just boiling and then allow to sit for 5 minutes before eating.
