A delicious creamy special! If you are missing something meaty, this is a great alternative!

Not only are mushrooms and garlic great for your immune system, but this recipe has good fats and is low in sugars.

Serves 2 people

Ingredients:

  • 300g mixed organic mushrooms
  • 6-8 garlic cloves
  • 1 white onion
  • 2 Tbsp Coconut oil
  • 2 Tbsp extra virgin olive oil
  • 1 teaspoon cayenne
  • 1Tsp Mixed herbs
  • 2 tbsp Worcestershire sauce
  • 400ml Can of Coconut cream
  • Small bunch parsley
  • 2 stalks of spring onion

Method:
Heat oil in a pan, chop onions and sauté for 2 minutes stirring in garlic and cayenne for 1 minute until a little soft.
Chop mushrooms throw into pan and cook on high for 5 minutes stirring regularly. Drizzle over with olive oil while cooking.
Pour in the mixed herbs and Worcestershire sauce, then lower the heat and stir in the cream.
Simmer for 5 minutes until the sauce thickens.
Serve with sprinkled parsley and/or finely chopped spring onions.
