This salad is light and refreshing – you will love this! When Melons are in season it is great to mix them up and this recipe does just that.

A little bit of “Healthy”, undamaged, saturated fat from the cream adds to a sense of fullness and helps to balance your blood sugars. This salad contains plenty of fluid, fiber, enzymes and antioxidants too. Plus the cinnamon is a wonderful circulatory herb, blood sugar stabilizer and is proven to lower cholesterol.

It is great for lunch or dinner.

Serves 2 people

Ingredients:

  • 3 types of melon – Honeydew, Rockmelon, Watermelon
  • Green grapes
  • Raisins
  • Fresh whipped cream (or plain yogurt if you prefer)
  • Cinnamon

Method:
Cut melons into bite-sized wedges. (1/4 honeydew, 1/4 rock and a generous slice of watermelon feeds 4 people a large helping each) Place all melon ingredients into a serving bowl. Add grapes. Mix gently. Serve with a dollop of cream or yogurt. Drop raisins over the top. Sprinkle with cinnamon powder
