A delightful dinner or lunch option.

Serves 4 people

Ingredients:

  • A handful of mung bean sprouts
  • ¼ cabbage
  • 1 x large carrot
  • 1 x tomato
  • 1 x red onion
  • A handful of baby spinach
  • Fresh parsley
  • Lemon juice
  • Olive oil
  • White Wine Vinegar
  • Pickled Cucumbers and olives as an extra if you like

Method:
Slice the cabbage into chunky bits and throw in the salad bowl. Shred the carrot and slice the red onion then throw them in too. Toss in the mung bean sprouts and spinach. Dice up the parsley and throw it into the mix. Toss the coleslaw in the bowel. Squeeze the lemon juice all over. Drizzle the white wine vinegar and olive oil over the top. Cover with sliced tomato. Add pickled cucumbers and olives if you wish and enjoy!
