Cauliflower Curry

A wonderfully warm and filling curry which is perfect for your Herbal DETOX or Herbal SLIM program.

You can spice it up as much as you wish!

Serves 2  – 4 people

 

Ingredients:

  • 1 x head of cauliflower chopped into small florets

Curry Paste:

  • 1 x diced onion
  • 8 x cloves garlic finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1/2 tsp black mustard seeds
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp curry powder

Mince together in mortar and pestle (or food processor) until a paste forms

 

Method:

Heat oil in a covered roasting dish. Rub curry paste into the florets of cauliflower by hand (a little messy) and place into pan with an extra drizzle of oil. Bake in the oven at 200o C until cauliflower starts to brown, about 30 minutes. Grill on high for a further 10 minutes to slightly char the top. I like it served with roasted pumpkin.
