An extra filling, high protein nutrient rich surprise.

Serves 2 people


  • 1 x eggplant
  • 1 x onion
  • 6 cloves of garlic
  • 4 x button mushrooms
  • 1 x capsicum
  • 2 x tomato
  • 1 x avocado
  • 1 tsp turmeric
  • 1 tsp chili flakes
  • A small handful of mixed herbs. 




Chop everything into bite-sized slices. Coat the eggplant with turmeric. Heat oil in a pan and throw in the eggplant. Saute with onions and garlic for about 2-3 minutes, then add capsicum, mushrooms, mixed herbs and chili flakes. Saute 5 minutes and serve with chopped tomato, avocado, and aioli.
