Salmon and asparagus are one of my favorite combinations. It’s simple, highly nutritious, and absolutely delicious! Makes a meal for one person with a bit of extra sauce.

Serves 1 person

Ingredients:

  • A fillet of fresh salmon
  • A handful of asparagus
  • 1/2 Sweet Potato
  • 1/2 Red onion
  • A few drops of olive oil
  • 1 x lemon

Method:
In one pan lightly sauteé the salmon in a few drops of olive oil, while in another pan gently sauté them sweet potato, red onion, and asparagus. Add a few cloves of chunky garlic and squeeze the juice of one lemon over the asparagus as it cooks.

Ingredients for the sauce:

  • 1 x dstsp of capers
  • 1 x dstsp of yogurt
  • Half a dstsp of lemon juice
  • Half a dstsp of olive oil

Method for the sauce:
Whip together in a Ladyship Blender 1 part capers, 1 part yoghurt, ½ part lemon juice, ½ part olive oil with a little salt and pepper. This is simply delightful drizzled over the salmon and asparagus. High in fat, protein, and fiber, this meal is extremely satisfying.

Serve with some red onion, sweet potato wedges, sour cream, caper sauce, or a dash of Worcester sauce.
