Ingredients: (per serving) 1 x large apple 6 x dates 2 x dstspn soaked shredded coconut 1 cup of unsweetened yogurt Cinnamon sprinkle Method: Soak coconut in just enough water to cover it for 20 minutes. Chop apple into quarters. Add to blender along with dates, coconut and ½ cup of water. Blend using the pulse function until apple is just minced and you get a nice thick lumpy paste. Mix in 1 cup of plain unsweetened yogurt and blend. Serve with a sprinkle of cinnamon. Did you know? There is an important saturated fatty acid in coconut called lauric acid. Thai Spicy Carrot & Apple Salad
A little hot number – and such a simple recipe. I often end up with a few too many carrots and apples in the fridge and this is a great way to use them up, not to mention it’s super healthy. With just the right amount of fresh chili, this is guaranteed to get your taste buds going. If you’re not against eating a little fish, you can include the traditional Thai fish sauce and it tastes amazing. That’s OK on your detox too. Serves 2 people Ingredients: 6 x cloves of garlic 2 tbs chili flakes 1 tbs honey 2 tbs olive oil 1 tbs lime juice 4 x large carrots 1 x crisp red apple ½ cup of raisins ¼ cup chopped cilantro leaves Fish Sauce (optional) Method: Shred the carrots, dice the apple and mix together in a bowl with the raisins, finely chopped garlic, cilantro and chilli flakes. Blend olive oil, honey, fish sauce and lime juice in a separate bowl until smooth and then pour over salad. All ready to eat. Eggplant Stir Fry
Depending on how long you continue cleansing, eggplant can become an indispensable part of your menu as it’s low in sugar and very filling. An extra filling, high protein nutrient-rich surprise. Serves 2 people Ingredients: 1 x eggplant 1 x onion 6 cloves of garlic 4 x button mushrooms 1 x capsicum 2 x tomato 1 x avocado 1 tsp turmeric 1 tsp chili flakes A small handful of mixed herbs. Method: Chop everything into bite-sized slices. Coat the eggplant with turmeric. Heat oil in a pan and throw in the eggplant. Saute with onions and garlic for about 2-3 minutes, then add capsicum, mushrooms, mixed herbs, and chili flakes. Saute for 5 minutes and serve with chopped tomato, avocado, and aioli. Avocado, Broccoli & Cucumber Salad
Avocado is highly recommended when detoxing as it contains great fats for your body and for that extra bit of healing energy. Quick, easy, fresh, green, and lovely! Serves 2 people Ingredients: 1 large or 2 small avocados 1 head of broccoli 1 leek 1 garden cucumber Olive oil Fresh basil or kalamata olives You can add a boiled egg if you’re on a 1-month gentle detox. Method: Chop broccoli and leek into bite-sized pieces and steam or blanch until a little soft but still crunchy. Chop cucumber and avocado into bite-sized pieces and stir into a bowl with broccoli. Finely chop a handful of fresh basil and sprinkle it into the salad with a drizzle of extra virgin olive oil or homemade aioli. Mesclun Salad with Mushrooms
A lovely fresh salad, full of healthy greens, mushrooms, avocado, and tomatoes. All with a pinch of oregano! Fantastic for your detox program. Add more mushrooms to this recipe to make it even more filling. Serves 2 to 4 people Ingredients: Salad Dressing: 8 cloves of garlic Plain unsweetened yogurt 1 x lemon 2 tbsp of extra virgin olive oil 1 tsp of oregano Salad: 6 x large field mushrooms 2 tbsp of extra virgin olive oil Mesculin salad greens Half an avocado 2 x tomatoes A dozen olives 6 pieces of sundried tomatoes Method: Prepare the salad dressing by peeling then crushing the garlic and putting it in a small bowl. Add the yogurt then squeeze in the lemon juice from the lemon. Add the extra virgin olive oil and the oregano. Mix until smooth. Cut up the field mushrooms into think pieces and saute in extra virgin olive oil until soft. Throw the mesclun salad greens into a large bowl. Skin and slice the avocado and add to the green salad. Place the warm field mushrooms onto the top of the salad and add the tomatoes. Add a dozen olives to the salad. Cut up the sundried tomatoes and add them to the large bowl. Green Rocket Salad
Rocket is such an amazing herb I grew this Rocket in my herb garden and I can’t believe how much rocket I have to eat within the first month. Not only is it delicious but super healthy. I don’t have access to rocket then Iceberg lettuce, or Mesclun mix will do the trick. From one little pack of seeds, I have enough rocket to make a salad almost every night. That’s why they call it rocket. This is a perfect salad for your 7 day or 14-day Herbal DETOX (less the Feta) or use it on your Herbal SLIM with the Feta and alongside a piece of pan-fried fish. Sweet Potato, Leek and Salsa
Try this delicious warming recipe during your Herbal DETOX or Herbal SLIM program. It is filling and hearty and makes you feel very satisfied. Serves 2 people Ingredients: 1 x Medium Kumara (sweet potato) or 2 Parsnips 1 x Large Leek 1 x Large Broccoli Salsa: Coconut oil 1 x Onion 6 x large cloves of garlic 1 x Capsicum Garlic Shoots Tomato paste 250gm Cumin powder Oregano herb Paprika powder Cayenne pepper Turmeric powder Soy Sauce Apple cider vinegar Honey Method: Scrub the Sweet potato and oven bake in Jacket for 45 minutes at 180 Celsius. While the Sweet potato is baking finely slice leek and dice broccoli and place in a saucepan with only 2cm of water. You will want to simmer the saucepan for about 10 minutes and time this in with the Sweet Potato. Salsa method: On the side, dice the onion, garlic shoots, and garlic and place in a frying pan with 2 Tbsp of Coconut oil (or cold-pressed olive oil). Saute while adding the herbs to your taste. This will create a kind of curry paste. Gently blend in 1 Tbsp honey, 1 Tbsp vinegar, and 1 Tbsp soya sauce, then add the tomato paste and diced capsicum. Add a little water until you get the consistency of salsa you prefer. You are now ready to serve. Indian Style Cauliflower Curry
This great simple coconut curry can be made with all kinds of vegetables depending on their availability. This makes it very versatile. Super healthy during your herbal detox, and incredibly delicious you need to make plenty of this dish for the whole family. Serves 4 people Ingredients: 1 1⁄2 tablespoons extra virgin oil 1⁄2 tsp cumin seeds (optional) 1⁄2 large white onion diced up 2 x garlic cloves crushed 2 tsp hot curry powder 1 x 440gm can of diced tomatoes 3 tbsp of tomato paste 400ml of water 2 x average sized zucchinis or a quarter of a cabbage 1/2 Buttercup Pumpkin 1 heaped cup of cauliflower florets 1 large carrot or red capsicum 1⁄2 cup coconut milk Chopped cilantro Pinch of salt Add in Brown rice if doing the 1 or month DETOX & SLIM Programs if you wish Method: Puree the tomatoes with 400ml of water and tomato paste. Heat oil in pan or wok. Add cumin seeds. When they sizzle, add chopped onion and cook until lightly browned. Add minced garlic and curry powder then stir for 30 seconds. Pour in pureed tomatoes, coconut milk and salt then bring to a boil. Reduce heat to medium, cover, and simmer for about 10 minutes or till the sauce thickens a little. Add chopped zucchinis (or cabbage), cauliflower, and carrot (red capsicum) then simmer until zucchini is soft. Serve with cilantro sprinkled on top. Sweet & Sour Chinese Style
This is a nice variation on Chinese sweet and sour. You can use these ingredients or try other vegetables of your choice. If you’re doing the one or two-month Herbal DETOX program then you could include some cubed fish, and if you’re doing the Herbal SLIM program then you could even try cubed chicken. Just quickly stir-fry the meat first, place aside and add back in just before serving. Serves 4 people Ingredients: Vegetables: 1 x large onion 6 x cloves of garlic 2 x carrots 2 x capsicums 1 x small head of broccoli 6 x flat mushrooms 1 x handful of spinach greens (or green runner beans) 1 x ring of pineapple chopped into pieces Sauce: 1⁄2 cup tomato paste 2 tbsp fresh ginger 1 small lemon 1 tsp paprika 1 tsp turmeric 2 dstp honey 1 tsp cayenne 1 dstp soy sauce Method: First of all mix the sauce, by melting the honey in hot water. Place dry ingredients in a bowl and mix, while adding soy sauce, lemon juice, and melted honey. Combine with tomato paste and fresh ginger. Then chop all vegetables into bite-size pieces as you desire. Slice and stir fry the mushrooms first and place to one side. Sauté in olive oil the onions, garlic for 2 minutes, then add the carrots, broccoli until half cooked and still crunchy. Add the spinach greens, mushrooms, pineapple and sauce and allow to come to a gentle simmer to 2 minutes. Serve fresh with a sprinkling of fresh cilantro.
