Because you might still feel like some comfort food my Roast Vegetable Salad is extremely filling, full of life and as guilt-free, as can be. SERVES 4-6 Ingredients: 2 x Large Kumura 3 x Large Parsnips 3 x Large Carrots 2 x Large Capsicum 6 x Large Button Mushrooms 1 x Red Onion 4 x Tomatoes 12 cloves of Garlic (optional) A handful of Pea Shoots (or you can add celery or cucumber) Dress with Balsamic Vinegar or Sweet Chili Sauce Method: Peel Kumura, carrots and Parsnip. Cut into large wedges. Place with Coconut Oil into a roasting dish and place in the oven when hot. Roast for about 25 minutes, then stir. After another 20 minutes add wedges of Red Onion and chopped mushrooms. You can also add in some whole garlic cloves if you like garlic. Continue roasting until soft and golden, remove and allow to partially cool. Serve with a side salad of pea shoots, Celery or cucumber, wedges of Tomato. You could also add some Avocado when they are in season. Drizzle with Balsamic Vinegar and Sweet Chili Sauce, or try our Spicy Salad Dressing or our Homemade Aioli. Mediterranean Summer Salad
This Mediterranean Salad is refreshing and full of great clean foods. Mix it up with your choice of greens! Iceberg Lettuce, Baby Spinach or Mescaline Greens, they all work! It is great for lunch or dinner. Serves 2 people Ingredients: Either Iceberg Lettuce, Baby Spinach or Mescaline Greens (or a mix of all 3) 1 x Chopped Avocado 4 x Sliced Radishes Half a sliced Cucumber 2 x sliced Tomato Quarter of a red onion A dozen Sun-dried Tomatoes A dozen Olives A little Pesto Dressing: Equal parts (about 100ml) of Olive oil, Plain yogurt, Apple cider vinegar. Add a dessert spoon hot English mustard (or mustard powder) and 1 tsp paprika. Method: Place the greens in the bowl then cut everything else and throw it in! Toss with the dressing. Enjoy! A classic detox drink contains carrot, ginger, and lemon. This is a simple uncomplicated, healthy twist on a smoothie and includes turmeric the super antioxidant. Cauliflower Curry
A wonderfully warm and filling curry which is perfect for your Herbal DETOX or Herbal SLIM program. You can spice it up as much as you wish! Serves 2  – 4 people Ingredients: 1 x head of cauliflower chopped into small florets Curry Paste: 1 x diced onion 8 x cloves garlic finely chopped 1 tsp cumin seeds 1 tsp coriander seeds 1/2 tsp black mustard seeds 1 tsp paprika 1 tsp turmeric 1 tsp curry powder Mince together in mortar and pestle (or food processor) until a paste forms Method: Heat oil in a covered roasting dish. Rub curry paste into the florets of cauliflower by hand (a little messy) and place into pan with an extra drizzle of oil. Bake in the oven at 200o C until cauliflower starts to brown, about 30 minutes. Grill on high for a further 10 minutes to slightly char the top. I like it served with roasted pumpkin. Beetroot & Grapefruit Smoothie
A wonderful superfood combination! Ingredients: 1 large bunch of Cilantro 2 x sachets of BodiTune DETOX n SLIM Protein Powder Half a large Avocado 1 x Grapefruit Half of a large Beetroot 2 big pieces of Ginger 3 dstsp of Dates 6 to 8 cubes of ice 400ml of water Method:Soak the dates in half a cup of water. Mushroom Stroganoff
A delicious creamy special! If you are missing something meaty, this is a great alternative! Not only are mushrooms and garlic great for your immune system, but this recipe has good fats and is low in sugars. Serves 2 people Ingredients: 300g mixed organic mushrooms 6-8 garlic cloves 1 white onion 2 Tbsp Coconut oil 2 Tbsp extra virgin olive oil 1 teaspoon cayenne 1Tsp Mixed herbs 2 tbsp Worcestershire sauce 400ml Can of Coconut cream Small bunch parsley 2 stalks of spring onion Method: Heat oil in a pan, chop onions and sauté for 2 minutes stirring in garlic and cayenne for 1 minute until a little soft.Chop mushrooms throw into pan and cook on high for 5 minutes stirring regularly. Drizzle over with olive oil while cooking.Pour in the mixed herbs and Worcestershire sauce, then lower the heat and stir in the cream.Simmer for 5 minutes until the sauce thickens.Serve with sprinkled parsley and/or finely chopped spring onions. Tomato, Leek & Onion Soup
I love this soup. It’s got to be my favorite soup for detoxing. Great for any time of year! Super healthy, high in antioxidants, and excellent for your herbal detox program or herbal slim program. Serves 4 people Ingredients: 4 small or 2 x large onions 1 x large leek 6 cloves of garlic 1 can of chopped tomatoes 4 fresh tomatoes 100gm of tomato paste 1 tsp turmeric 1 tsp Cayenne (or paprika) 1 tsp caraway seeds 2 tsp miso paste Method: Finely chop and lightly heat onions, leek and garlic in olive oil over low heat. Sweat with the turmeric, cayenne and caraway seeds for a couple of minutes. Add canned tomatoes, chopped fresh tomatoes and tomato paste. Add water to make enough soup and stir over heat until the vegetables are cooked. Just before serving – add 2 teaspoons of miso. Adding at the end of cooking preserves the nutrients in miso. I like to add a little chopped parsnip into mine to give that extra texture.
